I'm 60 years old and brought up in a family of chefs, bakers and cooks and I don't think one of them would be caught dead using an inexpensive griddle so I've never had one. Unfortunately the house we bought a few years ago only has an electric ceramic top stove, which I hate but can't afford to replace. To make pancakes on it I had used a 12 inch frying pan and at least 4 inches of the pan hang out over the heating surface. The folk worried about the uneven heating surface should have to cook with my previous pans. To the people concerned about the "uneven heating surface" I'd say that once it heats up completely the only place that seems to not heat as well are the outer edges. In cooking pancakes there is a way to get around that design issue which I'm sure is what keeps the price low. First off, remember, this was only $38 and at that price you can throw one out a couple of years and still be better off. When you first turn it on and warm it up (I actually cook pancakes at 300 degrees as they get a more even heat) lay down your pancakes and about half way through that first side I slip my pancake spatula under them and turn them 90 degrees and by the time the first side is cooked through, and evenly, the pan now has very even heat and when I flip them the second side comes out incredibly even. Grandpa, who was the head chef at two very famous Midwest hotels for many years taught me to cook pancakes at a lower heat. Cooked slower they come out more even and they cook all the way through. A big plus with this griddle is the huge size which was one of the main reasons I bought mine.
As for the one person's who said that the surface is too thin, it could be, although I've used mine once or twice a day for the last four months with no sign of the surface wearing through. I suppose that particular one could be a manufacturing defect although using high quality metal or plastic tools, not washing in the dishwasher and generally taking good care of it I'd guess the surface would have a long life. The only metal tool I will let near mine are my Dexter Russel spatulas Dexter Russell Turner, Square End 6'' x 3'' which are rounded on the ends and therefore do not scratch when used with care. I hand wash my griddle and I expect to get at the very least one to two year's use out of it. I love it and don't know how I got by without one all these years.
Update: ten months now and it is starting to show signs of the coating thinning although it still works great. I'm still using it once or twice a day and it still soldiers on and I'm oh so pleased with it.
